Sprouted wheat berries give this tabbouleh a robust, chewy texture that is complemented by sharp, salty feta and a mix of fresh herbs.

SERVES 4–6 PREP 10 MINUTES

COOK 20–25 MINUTES

2 cups dried sprouted wheat berries

4 tbsp extra virgin olive oil

2 tbsp lemon juice

handful of flat-leaf parsley, finely chopped

handful of mint, finely chopped

handful of dill, finely chopped

salt and freshly ground pepper

1 bunch scallions, trimmed and finely chopped

6-in (15cm) segment English cucumber, deseeded and finely diced

12 cherry tomatoes, quartered

1 ⁄2 cup crumbled feta cheese
